If we install both Map Legacy and Map Engine, will we see all the maps defined into le Legacy and Engine server ?

You can, but the UI requires a choice between Legacy and Map Engine. Since they cannot be displayed at the same time, you will need to toggle between them manually.
But keep in mind that once you will start the migration from Legacy to Engine, you will loose all the existing Maps already created on Engine.
+1So if I resume, the MAPS displayed will be only the Legacy or the Engine according the parameters defined on Centreon IHM ?
